  1. Peel the sweet potatoes and chop them, the cauliflower, red pepper and onion into bite-sized pieces. Combine the vegetables in a large bowl and drizzle with olive oil, salt and pepper. Spread on a baking sheet lined with foil.
  2. Preheat the oven to 375 degrees.
