  1. Spread the sweet potatoes on a baking sheet and roast in the oven for 15 minutes, stir and roast for another 15 minutes, or until soft.
  2. Preheat the oven to 375 degrees. Peel the sweet potato and cut into small cubes. Toss in olive oil and sprinkle with salt, pepper and cinnamon.
