  1. Spread a thin layer of the tomatoes (you may not need all amount). Sprinkle with the ham, mozzarella and cheddar. Repeat with the remaining dough.
  2. Divide the dough into two parts and roll each on the slightly flour-dusted surface. The dough should be rolled quite thin but shouldn't be translucent.
  3. Let the dough stay for at least several hours. You can also put in a large bowl, cover ith plastic and refrigerate overnight.
  4. Add the oregano and the flour. Knead the dough adding some flour more if needed.
  5. Dissolve the yeast in the water, along with the olive oil, salt and sugar and leave the mixture for 5-10 minutes. The good, active, yeast will have started foaming.
