  1. Peel and chop the carrots, and add them to the pot as well.
  2. Dice the jalapeno peppers and add to the pot.
  3. Roughly chop the white onion, leeks, celery and sweet red pepper. Add to the pot, turn the heat to low, and allow vegetables to soften.
  4. Add the oil and butter to a large pot and heat on medium.
