To make the salad, chop up the lettuce, and add to a bowl. Add the sliced tomatoes, green onions and bocconcini. Do not add the olive oil and vinegar just yet.
Mix all the marinade ingredients together, so the bourbon, dijon mustard, honey and the essence. Whisk well then add the pork slices to the marinade and toss so that each piece of pork has some of the marinade on it. Cover with plastic wrap and refrigerate for at least 2 hours.
