  1. Mash bananas to make one cup.
  2. Peel zucchini and grate enough to make one cup.
  3. Add eggs, oil, applesauce, sugar and vanilla and mix until just wet.
  4. Combine flour with dry ingredients in mixer. Blend together.
  5. Preheat oven to 325 degrees.
