  1. Place the pistachios in a ziplock/sealable plastic bag. Crush pistachios using a rolling pin into tiny pieces, and then fold them into the cake mixture.
  2. In a separate bowl, whisk together the egg, milk, and vanilla essence.Gradually fold this mixture into the flour mixture.
  3. Sift together the flour, sugar, and baking powder. Rub in the butter until you get a breadcrumb-y consistency.
  4. Preheat oven to 170C/325F/Gas mark 3.
