  1. In a saucepan, cook the onion in the butter over a low-medium heat for approx. 5 minutes, until softened and translucent. Add the vegetable stock and potatoes and cook at a medium-high heat until the mixture starts to boil. Then leave the mixture to simmer for 15-20 minutes. Add the peas and allow soup to simmer for another 5 minutes.
