Egg, Caramelized Onion and Avocado Breakfast Tacos

  1. Set aside.
  2. Mash until desired consistency.
  3. Add in lime juice and a pinch of salt and pepper.
  4. Cut avocado in half. Remove pit and scoop out flesh with a spoon and place in a small bowl.
  5. Remove from heat and set aside.
  6. Stir in balsamic vinegar and cook for 1-2 minutes longer.
  7. Cook onions stirring occasionally to avoid burning until onions are soft and slightly brown about 15 minutes.
  8. Add onions and stir to coat with olive oil. Season with a small pinch of salt.
  9. Heat olive oil in a skillet over medium heat.
