  1. In a saucepan, cook the onion in butter over a low-medium heat for approx. 5 minutes, until softened and translucent. Add the vegetable stock, carrots, potato, bay leaf, double cream, and seasoning and cook at a medium-high heat until the mixture starts to boil. Then leave the mixture to simmer for 25-30 minutes.
